A cocktail bar that doesn’t sell alcohol? How much quirkier can you get?
With no alcohol available to buy on the premises, and no drinks menu, guests are invited to bring their own favourite tipple for the skilled bartenders to create cocktails tailored perfectly to their taste. Cocktails are prepared and served right in front of you from an antique drinking trolley containing an encyclopaedic selection of accompaniments: fresh syrups, pressed fruit and vegetable juices, spices, herbs, salts, seasonal fruits, home-made cordials and bitters. Here guests can absorb the 1920s vibe.
The bartender crew are said to be some of the most talented mixologists the UK has to offer. Apparently they are experts in fashioning a well balanced drink as well as being devilishly experimental and have a tendency to throw curve balls into cocktails. Beetroot and chocolate? Why not? Ginger and lychee? Of course!
They are well aware that every good bartender not only mixes drinks to a fantastic standard but also has an excellent appreciation of historical context, scientific principles, hegemonic bias, paradoxes and hosting a good party. As such only extremely experienced bartenders work for BYOC.
Their staff have learned the recipes, written the recipes and then thrown the recipes away!
But getting back to what we said…what a unique concept. They don’t sell alcohol…they sell the science of mixing to make amazing tastes!
